Serve this healthy salad with a side of sour cream.
Cajun Shrimp Salad
serves 4-5
1 pound shrimp, peeled and deveined
1 tablespoon olive oil
2 teaspoons Cajun seasoning (Tony’s)
½ cup quinoa
1 cup water
¼ teaspoon salt
2 cups chopped romaine lettuce
1 cup tomatoes, diced
½ red onion, diced
juice of 1 lime
1 teaspoon Cajun seasoning
salt and pepper, to taste
Cook the quinoa by boiling one cup of water. Add the quinoa and salt, reduce heat to low, and cook, covered, for 15 minutes.
Meanwhile, toss the tomatoes and onion with the lime juice, Cajun seasoning, and salt and pepper. Set aside.
Heat a nonstick skillet over medium heat. Add one tablespoon olive oil and the shrimp. Sprinkle shrimp with Cajun seasoning and cook for about 2 minutes per side.
To serve, add lettuce to a bowl. Add the quinoa, tomato/onion mixture, and the shrimp.
