This is a perfect dinner for that night when you’re busy taking children hither and yon and you have to feed them chicken nuggets (we all do it!), but you want something quick and healthy for yourself.  You can make these tacos while the nuggets are heating. No kidding.  I love the combo of the spicy beans, the creamy goat cheese and avocado, and the sweet of the honey.  This is a new regular for me!

Spicy Black Bean Tacos
serves 2
1 teaspoon coriander
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1 can black beans, drained and rinsed
1 avocado
2 teaspoons honey
1/4 cup goat cheese
zest and juice of one lime
4 fajita size flour tortillas

 

 

Add coriander, cumin, juice of half a lime, and salt and pepper to beans.  Heat over medium heat until warm. Warm tortillas in the microwave.

 

Combine the juice and zest of half a lime with honey.  Assemble the tacos by adding the beans to the tortillas and top with a couple of slices of avocado, a little goat cheese, and drizzle with the honey lime sauce.
