Not much about this recipe is homemade, but making your own croutons takes a pretty pedestrian salad and makes it special.  My kids love Caesar salads, so we eat this recipe on a regular basis.

 

Chicken Caesar with Homemade Croutons

 

white meat of rotisserie chicken, shredded

romaine lettuce, rinsed and dried

your favorite Caesar dressing

freshly grated Parmesan cheese

baguette (can be day old)

extra virgin olive oil

salt and pepper

 

To make the croutons, cut the baguette into bite sized pieces.  Drizzle with olive oil and toss well.  Sprinkle with kosher salt and freshly ground pepper.  Bake at 400 for 7-9 minutes, or until brown and crispy.  Toss with the lettuce, chicken, and cheese.
