I loved eating such a light sandwich outside on this warm evening!  John’s out of town, so the kids ate the chicken legs (if only I could find a chicken with 3 legs) and some white meat along with a pita and tomatoes from the farmers’ market, while I ate this Sun Dried Tomato Chicken Pita.  Some basil sure would have been great, but I forgot until after I ate…

 

Sun Dried Tomato Chicken Pita

2 tablespoons balsamic vinegar
1 1/2 tablespoons sun-dried tomato oil
2 tablespoons chopped drained oil-packed sun-dried tomatoes
1/4 teaspoon freshly ground black pepper
1 garlic clove, grated on a microplane
2 shredded chicken breasts (from rotisserie chicken)
1 cup chopped tomato
1/2 cup goat cheese
pita bread

 

In a bowl, combine balsamic vinegar, sun dried tomato oil, sun dried tomatoes, pepper and garlic. Stir in chicken, tomato, cheese, and basil. Line each pita half with 1/4 cup greens. Divide chicken mixture evenly among pitas.
