I call it The Ultimate Guacamole because you can just delete every other guac recipe you’ve got: this one is the best. This guacamole so good that you’ll feel like you’re sitting on the beach in Mexico. I promise that if John ever said, hey, I think I want to give it all up and move to Mexico, I’d be right there beside him. Provided that he moved me to a five star beach resort with clean water and good food….I just love going to the beach in Mexico.
Here’s my recipe. It’s very simple. We had some friends over the other night to celebrate our friend’s birthday, and half the bowl of guacamole was eaten before I could even take a picture! It’s so good that you’ll need to make a double batch!
The Ultimate Guacamole
serves 2 (figure one avocado per person)
2 ripe avocados (here’s a tip: always buy an extra avocado at the store; you just never know if it’s good till you cut it open)
1/2 a red onion, finely diced
juice of one lime
2 tablespoons finely chopped cilantro
big pinch of salt
Mash together all the ingredients with a potato masher. Taste and add more salt and lime juice if necessary. Leave it chunky. Serve with chips.
Oh, and I wanted to add in this picture just for me, because it reminds me of sitting on the beach in Mexico having dinner around this time last year. Love it there! Disregard John’s hair…he was growing it out to see what it would look like. It wasn’t a pretty sight, as anyone can tell you. Everyone at his office nicknamed him “Boy Band.”
