This was such a fresh meal! And pretty, too. The kids ate leftover chicken, leftover beans, some rice, and pineapple. They aren’t fans of salmon, and I can’t really blame them. I didn’t like it either until I was an adult. But now I love it!
Grilled Salmon with Fresh Fruit Salsa
4 salmon fillets, thawed
salt and pepper
juice of half a lime
1 tablespoon olive oil
For salsa:
1 cup fruit, chopped (I used pineapple)
1/4 cup minced red onion
2 tablespoons chopped cilantro
juice of half a lime
salt
To make salsa, chop fruit and combine with onion, cilantro, lime juice, and salt. Set aside. Drizzle salmon with olive oil, and liberally sprinkle salt and pepper. Grill on high for about 3-4 minutes the first side, and flip salmon and grill the second side until firm (the amount of time will depend on the thickness of salmon). Remove from grill and allow to rest. Serve with salsa.
