I used a tri-tip roast, but a rump roast, chuck roast, or even pre-cut stew meat will work great.
Slow Cooker Beef Tips with Gravy
serves 6
3 pounds beef roast, cut into 1 inch pieces
2 tablespoons olive oil
1 packet onion soup mix
2-3 cups beef stock
for the gravy:
2 tablespoons butter
2 tablespoons flour
reserved cooking liquid from the slow cooker
In a large skillet, heat olive oil over medium heat. Add beef to the pan in a single layer, browning well on both sides (you might need to do this in batches). Transfer beef to the slow cooker. Top with onion soup mix. Add beef stock to cover. Cook on low for 6-8 hours.
For the gravy, scoop out the cooking liquid from the slow cooker. Melt the butter in skillet. Add the flour, stirring until it starts to brown. Add the cooking liquid from the slow cooker, a cup at a time, whisking well, to make the gravy. Let the gravy come to a simmer and cook until thickened.
Serve with mashed potatoes.
