Substitute any fish and any fresh herbs in this recipe.

Mahi Mahi with Lemon Basil Butter

serves 4

 

4 mahi mahi filets

1 tablespoon olive oil

salt and pepper, to taste

3 tablespoons butter

juice of one lemon

handful fresh basil, chopped

 

Heat olive oil in a nonstick pan over high heat.  Pat mahi mahi dry with paper towels and sprinkle with salt and pepper.  Place fish in hot oil and cook for 5 minutes on first side.  Flip the fish and cook on second side for 3-4 minutes.  Top each mahi mahi filet with butter, then add lemon juice and basil.
