Roast sweet potatoes in the oven or just pop them in the microwave for about 10 minutes!

 

Mashed Sweet Potatoes

serves 4

 

1 pound sweet potatoes

½ cup half and half

3 tablespoons butter

2 tablespoons brown sugar

1/2 teaspoon salt

¼ cup pecans, toasted

 

Bake sweet potatoes at 400° for 45-50 minutes, or until soft.  Or just microwave them for about 10-15 minutes.

 

Let potatoes cool to the touch and then remove the skin (it should just peel away).

 

In a small saucepan, bring half and half, butter, and brown sugar to a simmer.  Add mixture to the sweet potatoes a little at a time, mashing with a fork or potato masher.  For extra creamy mashed sweet potatoes, use an immersion blender to combine.

 

Top sweet potatoes with toasted pecans and a sprinkle of kosher salt and brown sugar.
