I found these delicious Cara Cara oranges at my Whole Foods, but you could substitute grapefruit or regular oranges. I like the peppery bite of the arugula with the tartness of the oranges, combined with the sweet from the honey in the dressing. The almonds add a crunch, and the goat cheese finishes it perfectly. Follow the link if you don’t know how to supreme an orange or grapefruit (it gets rid of all that gross white stuff on the fruit).
Winter Citrus Arugula Salad
serves 5-6
4 cups baby arugula
2 medium sized oranges (or one grapefruit), supremed the way Martha does it
a sprinkle of sliced almonds
1 tablespoon (ish) crumbled goat cheese
1/4 cup honey
1/4 cup Champagne vinegar
1/4 cup olive oil
salt and pepper to taste
In a jar with a lid, combine the honey, vinegar, olive oil, and salt and pepper. Shake well. Toss with the greens, oranges, almonds, and goat cheese.
