Traditional shrimp scampi is swimming in butter, garlic, and white wine served with copious amounts of pasta. It’s delicious, yes, but it’s not an everynight kind of meal. This Weeknight Shrimp Scampi gives you all the flavor with little guilt!
Weeknight Scrimp Scampi
serves 4-5
1 pound peeled and deveined shrimp
2 tablespoons butter
4 cloves garlic, minced
1/4 cup white wine
salt and pepper to taste
Melt butter over medium heat. Add garlic and saute for 2 minutes. Add a pinch of salt and pepper to the shrimp, add it to the butter/garlic, and cook until it’s pink, about 3 minutes. Add the white wine, stir well, and serve with brown rice and a salad.
