I love a good cheesecake, but perfect cheesecake can be a little tricky. Seems like when I try a whole one, the center falls or I get cracks. But these mini ones could not be easier! You actually want the cheesecakes to fall in the center because it makes a spot for the caramel. And if you get cracks, it doesn’t matter because the caramel will cover it.
I even got my kiddos into the kitchen for this recipe. One daughter counted out the cupcake liners while my son counted chocolate sandwich cookies (he might have eaten a couple along the way). My other daughter pressed the cookie crumbs into the cupcake liners. And all 3 kids got to lick the bowl!
