If you’ve been to my house or asked me to bring a potluck dish to yours, you’ve no doubt had this salad.  It’s my go-to salad.  Sometimes I top it with chicken to make it into a meal, and I often substitute the berries with whatever berries look good, exchange the feta for goat cheese, or add walnuts instead of almonds.  But the dressing is always the same: equal parts Champagne vinegar, honey, and olive oil.  So simple, but extraordinary.

 

I took this to a friends’ house a few days ago.  Keep the dressing in a mason jar for transport, and toss the salad right before serving.

 

 

Fresh Berry Salad

serves 4

 

4 cups spring mix salad greens

2 cups fresh berries (strawberries, blueberries, blackberries, raspberries, even grapes in a pinch)

1/4 cup slivered almonds (or walnuts, hazelnuts, pecans)

1/4 cup crumbled feta cheese (or goat cheese)

1/4 cup honey

1/4 cup Champagne vinegar

1/4 cup olive oil

salt and pepper to taste

 

In a jar with a lid, combine the honey, vinegar, olive oil, and salt and pepper.  Shake well.  Toss with the greens, berries, cheese, and nuts.
