I was thrilled when Panera came out with these fresh tasting salads and bowls! Have you tried them yet? This is not a sponsored post, by the way. I just find myself at Panera at least once a week for meetings, lunches with friends, or with the kids who ADORE their mac and cheese (who doesn’t?).
The Power Chicken Hummus Bowl is my favorite. It’s so tasty that you forget it’s good for you ! Here’s my take on the bowl. Also, imagine it with chicken. I forgot chicken.
Copycat Panera Power Chicken Hummus Bowl
serves 4
4 cups salad greens (I used red bibb lettuce from my Farmbox, but any greens will work)
1 cup homemade or good quality purchased hummus (I make my own because it’s my favorite snack)
1 cup cooked quinoa
1 cup tomatoes
1 cup blanched asparagus (boil for 2 minutes, then plunge into cold water to stop the cooking)
1 cup cooked chicken (not pictured, but it was there!)
juice of 2 lemons
salt and pepper to taste
Place salad greens in the bottom of each bowl. Top each with 1/4 cup hummus, 1/4 cup quinoa, 1/4 cup tomatoes, 1/4 cup asparagus, 1/4 cup cooked chicken. Squeeze half a lemon over each bowl. Sprinkle with salt and pepper.
