There is a food truck in my town that has amazing soups with the best names (my favorite name is “When Oprah Met Gayle”). But the thing I can’t get enough of is Mary Margaret’s Magical Tiny Tomato Salad. I don’t have the exact recipe, but based on the description, I’ve concocted my own version.
Tiny Tomato Salad
1 pound grape tomatoes
2 tablespoons olive oil
1/4 cup balsamic vinegar
1/2 teaspoon salt, or more to taste
1/4 teaspoon freshly grated black pepper, or more to taste
1 tablespoon Italian seasoning blend (dried basil, thyme, rosemary, garlic)
1/4-1/2 cup crumbled feta cheese, to taste
bunch of basil or parsley leaves, chopped (I used parsley because basil is not in season, but basil would be better)
Cut tomatoes in half. Use this handy trick to do it quickly.
Add the olive oil, vinegar, salt, pepper, Italian seasoning blend, feta, and fresh herbs. Toss to coat. Serve immediately or within 3-4 hours.
