Now THIS is some pumpkin bread. It’s dense, soft, and not overpowered by spices. It’s just our favorite! The recipe makes 2 loaves, so you can take one to a neighbor or make half into muffins. Add chocolate chips or nuts if you like!
Pumpkin Bread
makes 2 loaves
3 cups flour
1 1/2 cups sugar
1 cup brown sugar
2 teaspoons baking soda
1 1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup oil
1-15 ounce can pumpkin
2/3 cup water
In a large bowl, combine all dry ingredients together (flour, sugar, brown sugar, baking soda, salt, cinnamon, nutmeg). Next, add the wet ingredients (oil, pumpkin, water) and mix everything together.
Divide into two greased loaf pans.
Bake at 350 degrees for 50-60 minutes. Cool 10-15 minutes in pans then, remove from pans and cool completely.
