This cookie is a combination of your favorite banana bread and a chocolate chip cookie. It’s chunky with not too much sweetness…it could almost pass for breakfast!
Banana Chocolate Chunk Cookies (Martha Stewart)
1 1/2 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 sticks butter, room temperature
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 cup mashed banana (about 1 large banana)
1 cup oats (not quick cooking)
8 ounces semi sweet chocolate chunks
1/2 cup chopped walnuts
Preheat oven to 375. In a bowl, whisk together flour, salt, and baking soda and set aside. With an electric mixer, mix butter and sugar on medium speed until light and fluffy. Add egg and vanilla; mix until combined. Mix in banana. Add flour mixture and mix until just combined. Mix in oats, chocolate chunks, and walnuts.
Drop dough onto baking sheets lined with parchment paper. Bake cookies until golden and just set, 12 to 13 minutes. Let cool on sheets for 5 minutes, then transfer to cooling rack to cool completely.
