Have you been eating too much? Yeah, me too.  It’s so hard during the holidays to stay on track!  This salad will help because it’s so good you’ll not realize it’s healthy.

 

Pear and Pomegranate Salad with Chicken

 

2 cooked chicken breasts (either leftover or from a rotisserie chicken)

4 cups salad greens

1 tablespoon dijon mustard

2 tablespoons champagne vinegar

2 tablespoons honey

3 tablespoons olive oil

salt and pepper, to taste

goat cheese, pomegranate arils/seeds, sliced pear, and walnuts all to taste

 

In a small jar with a lid, combine the mustard, champagne vinegar, honey, olive oil, and salt and pepper.  Shake well.  Toss salad greens in the desired amount of dressing (leftover dressing will keep in the refrigerator for a week).  Top the salad with the chicken, pears, pomegranate seeds, goat cheese, and walnuts.
