I’ve been skeptical of The Green Smoothie, I won’t lie. Drinking spinach? Um, don’t think so. But then as I was stuck on the runway at La Guardia last night coming home from BlogHer with some blogger friends, we got to talking about them. Writer and blogger, Lela Davidson, swears by this recipe, and she’s really perky despite getting very little sleep, so I thought I’d give her recipe a shot.
This recipe for The Green Smoothie is a little different from most in that it doesn’t have any milk or yogurt. To me, it’s more refreshing this way. And it’s a great way to incorporate more fruits and vegetables into your diet. You don’t taste the spinach and lettuce. I promise!
Here’s how you get your kids to try it: call it the Green Monster, Green Giant, Green Goblin, or Green Goddess, depending on your child’s interests. Make sure it’s really, really, smooth and cold. If you can make it fun, they will try it!
The Green Smoothie
1 organic romaine lettuce heart
3-4 cups baby spinach
1 pear, core removed, skin on
1 apple with skin, core removed
1 banana
1 cup cold water
juice of one lemon
ice
Place all the ingredients in the blender. Blend until very smooth. Add more ice after it’s blended until it’s the consistency you like. Makes 3-4 servings. Store leftover smoothie in the refrigerator.
