What do your kids do when you announce it’s sandwich night…..again? Grunts, sighs, and some eye rolling happen in my house. We have had quite a few sandwiches this summer, so I came up with a way to spice it up a bit. I learned this trick at BlogHer last weekend, and it worked PERFECTLY for dinner tonight. Instead of the “ugh, not sandwiches again!” response, I got, “Oh cool! Ham waffles!” Um, ok, we’ll go with that..
Simple Ham and Cheese Panini
(makes one sandwich)
2 slices bread
2 oz. best quality sliced smoked ham
2 teaspoons honey mustard
1 slice sharp cheddar cheese
1 teaspoon salted butter
Heat waffle iron to high. Assemble sandwich. Butter the waffle iron and place sandwich inside. Cook until brown and crispy.
