On those nights when you’re too tired/too hot/too lazy to cook, the rotisserie chicken is the perfect solution. You can do so many things with it, and at my grocery store, it’s as cheap as a whole raw chicken. I love to throw it on a salad to make a quick meal. In addition, my kids love chicken legs (too bad chickens only have 2 legs and I have 3 kids), so it’s a go to meal for us pretty frequently.
Chicken Asparagus Salad with Citrus Dressing
1 rotisserie chicken, white meat
1 bunch asparagus
1/4 cup goat cheese
juice of 3 limes
2 teaspoons dijon mustard
2 teaspoons honey
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper
Boil asparagus for about 3 minutes and drain into an ice water bath to stop the cooking. The asparagus should stay bright green and slightly crunchy. Combine lime juice, mustard, honey, salt, pepper, and olive oil in a small jar and shake to combine. Toss spinach and asparagus with the dressing and top the salad with the chicken and goat cheese. Sprinkle with additional salt and pepper to taste.
