All my favorite summer dishes involve tomatoes, and a simple Caprese Salad is just wonderful with fresh from the garden, vine ripe, tomatoes. I used some from the garden (I didn’t have enough, boo) and some from the store, but it was great just the same.
You can serve this salad alongside grilled chicken or fish, with a sandwich, or alone for a light lunch. You know to never refrigerate your tomatoes, right?
Caprese Salad
tomatoes
fresh mozzarella (not the shredded stuff in the bag)
fresh basil
olive oil
salt, pepper
vinegar (optional)
If you’re using large tomatoes, layer tomatoes with mozzarella and basil for a pretty presentation. If you’re using small tomatoes like I did, mix tomatoes with cheese, drizzle with olive oil and vinegar (if using), and sprinkle with salt and pepper.
