I discovered this recipe a few years ago when Kate had lost her 2 front teeth, Alex didn’t have any teeth, and fresh corn on the cob wasn’t an option for the toothless. ha! Now, we’d all choose this method for cooking fresh corn over any other! You can leave out the basil or add another herb if you’d like.
Fresh Corn with Butter and Basil
5 ears fresh corn on the cob, shucked and cleaned of any silks
2 tablespoons of butter
salt and pepper
fresh basil to taste, chopped
Cut the corn off of the cobs using a serrated knife. TIP: place a small bowl inverted into a large bowl. Put the cob on top of the small bowl to cut off the kernels and they will fall into the large bowl.
Heat butter in a saute pan until melted. Add corn, salt, and pepper and cook for about 5 minutes (the fresher and sweeter the corn, the less time it should cook). Add herbs at the very end and serve.
