Fresh corn on the cob is one of my favorite summer foods, especially grilled.   It’s great with just butter and salt, I know, but making a compound butter to slather all over it makes it even better!

 

Lemon Basil Butter

 

1 stick salted butter

zest of one lemon

juice of one lemon

1 tablespoon fresh basil, finely chopped

small pinch of salt

 

Soften butter on the counter, or microwave it for a few seconds.  Mix in basil, lemon zest, lemon juice, and salt.  Form the butter into a log and store in the refrigerator wrapped in plastic wrap.  Or if using immediately, put softened butter into a bowl for serving.
