Tonight for dinner we had sandwiches, so I won’t bother you with that “recipe”. Instead, I’ll tell you about this delicious granola I made the other day as a hostess gift for a friend. We like granola around here; on yogurt, as cereal with milk, and all by itself as a snack.
Cranberry Maple Granola
4 cups oats (not quick cooking)
2 tablespoons brown sugar
1/3 cup canola oil
1/3 cup maple syrup
1 teaspoon vanilla
1 teaspoon salt
1 tablespoon cinnamon
1 cup chopped walnuts
1 cup dried cranberries
Combine oats, nuts, brown sugar, salt, and cinnamon. Mix canola oil and maple syrup with vanilla and pour over dry ingredients. Mix well and spread on cookie sheet. Bake at 300 degrees for 20-30 minutes, stirring every 10 minutes or so until brown. Let cool then add cranberries.
